Lazy Eggs

I found these eggs on the above mentioned facebook page by Team Skinny. My son and I made the for breakfast today. We changed it up a bit because he doesn't like tomatoes and he love Fox Point Seasoning on his eggs. They were so delicious that we will for sure be making them again. We are going to try freezing them and trying them with toast, english muffin or bagel.


They truly were Lazy Eggs. It took only a few minutes to put them together and then we got ready for our day while they cooked up. Can't get easier than that. The clean up was a breeze too as the eggs came right out of the pan and washed up without much elbow grease.
I think adding some avocado to this dish would make them absolutely amazing and tasty.
INGREDIENTS
For each bite:
  • 1 egg
  • 1 slice of ham, bacon or crumbled sausage
  • 1T cheddar cheese
  • 1 t tomatoes, finely chopped
  • salt & pepper
  • optional: we also used Fox Point Seasoning (yummy!)
INSTRUCTIONS
  1. Using a muffin tin, spray each muffin "well" (the spot where muffin goes) with nonstick spray
  2. Place a slice of ham in the bottom of each muffin well
  3. Place about a teaspoon or so of diced tomatoes on top of the ham (optional)
  4. Sprinkle shredded cheddar cheese over tomatoes
  5. Crack one egg into each spot
  6. Sprinkle salt and pepper on each
  7. Bake at 350 F for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through.
